Pumpkin Rice

Pumpkin is a versatile vegetable which can be cooked in many ways. You can fry it, make cakes out of it, steam it or even bake a cake with it. One way of savouring the delicious sweet-tasting pumpkin is to cook it with rice in a rice cooker or claypot over charcoal fire (if you have one). You can also cook it in a pot over a gas stove or electric burner but care is needed to prevent burning.
Pumpkin rice ensures that every taste of the pumpkin is fully absorbed by the rice and the use of other ingredients like dried prawns, mushrooms and belly pork makes this dish a truly satisfying dish to make and eat. Steamed Ladies Fingers with Superior Sauce

Steamed Ladies Fingers (Okra) with Superior Sauce is a dish which can be attempted by anyone, even a beginner. The superior sauce is only a nice sounding name but it is in essence, a combination of light soya sauce and oyster sauce. This recipe takes approximately 3 minutes to cook and less than 10 minutes to prepare.
Some people dislike the “slimy” inner part of ladies fingers when it is stir-fried. When you steam it whole, you do not have to deal with the “slime” – which is just the natural juice from within the vegetable. I find this dish very healthy as it only involves cooking by way of steaming, though in preparation of the superior sauce, you do need to add in a little bit of garlic oil. As for the type of ladies fingers, choose the tender ones which are usually lighter green in colour.

Fried Tomato with Minced Pork

Fried Tomato with Minced Pork is a dish I learnt from my mother-in-law. Well, perhaps not exactly learnt but she cooked it and I ate it. Recently, we had a few tomatoes lying in the fridge and I thought why not give it a try. I did not ask my mother-in-law for the recipe and tried to cook it to resemble the one she cooked and it turned out quite alright.
It is a simple dish, and takes just a couple of minutes to prepare and cook. Actually, you just need to cook the minced pork. The amount of time for the stir frying of the tomato is pretty much up to you. The longer you cook it, the softer it becomes. Sambal Belacan Baby Corn

I am quite fond of baby corn as I find them tender, sweet and very appetising. The sweet nature of baby corns make it a wonderful accompaniment to mixed vegetables dishes. This dish, however, highlights the sweet baby corn in itself by pairing it with the irresistible sambal belacan - spicy and pungent prawn paste. It is quite simple to cook and ingredients are fairly minimal. Don’t let the photo presentation deceive you, this is a delicious dish on its own!
