Garlic Hoi Sin Chicken

Last weekend, I was looking at my bottle of Hoi Sin Sauce and wondering what I shall do with it. With 3 chicken drumsticks available in the fridge, I decided to give the chicken a marinade and try out something new. It turned out tasty, albeit slightly charred due to the frying process. I have a feeling that the sugar content in the Hoi Sin Sauce caused the quick charring of the chicken. Perhaps, I did not coat the chicken enough with corn flour.

Anyway, the use of garlic gives the chicken a unique fragrance (unless you find garlic repulsive, which some do) which my daughter enjoyed very much. I had never seen her eating so much meat at one go! I would recommend this dish as a good finger / snack food or as an accompaniment to either rice or pasta.

Minced Pork Balls with Preserved Black Beans

Preserved Black Beans, Fermented Black Beans and Salted Black Beans all mean the same thing, namely black beans which have been preserved in a salty solution and are usually sold in glass jars. The taste is naturally salty and usually, only a small portion is used.

This dish was oft cooked by mum for lunch during my schooling days and it tastes delicious with plain white porridge or even sweet potato porridge. Preparation and cooking should be less than 30 minutes as it only involved mincing the pork and cooking it with the preserved black beans. You’ll be amazed how easy it is to whip up a great tasting dish in a jiffy.

Stir Fried Pork Tenderloin with Yam

This is the third of a series of recipes using yam. When there is only 2 of us (my wife and I) to finish up a whole yam, we have to cook it in different ways as there is no way we can finish a whole yam in one sitting.

Anyway, as yam is sweetish in taste, it is suitable to fry it together with pork tenderloin (the most tender part of pork). I prefer this compared to potatoes as potatoes are not as flavourful. This is not the well-known dish of yam with belly pork slices but more alike the recipe using potatoes and is served in many chinese homes.
